Czerw's Kielbasa is one of Philly's most iconic small businesses, producing Polish sausage out of a hand-built smoker from 1938. When I asked John and the family to show me the process, they told one of the younger workers to "get the plank". They then placed it over the coals, stepped into the smoker, and pulled out pounds and pounds of sausage. It was an unbelievable sight.
